Studio Lunch Fried Softshell Crab

Gohar World turned a year old yesterday and Laila had a baby last Friday, so there has been plenty of reason to party at the studio. Aaand it also happens to be soft shell crab season, so we fried crabs to celebrate!

Serves 6

 

INGREDIENTS

12 soft shell crab

1/2 cup flour

1 tbs cumin + 3 tsp salt

1/2 bunch parsley or cilantro, picked

1/2 lemon, juice and zest

1 yellow onion, sliced

3 cups vegetable oil

 

RECIPE

Dry the crab. Combine flour, salt, and cumin. Dredge the crab in the flour mixture and shake the excess off.

Heat the oil in a deep pot. Once hot place the crab in the hot oil. Fry for 4 minutes then flip and fry 4 more minutes. Remove from the oil and drain on a paper towel. Add salt while hot.

Combine parsley with onion. Add a little lemon juice, zest, and salt and serve along with the crab.
