This is a lentil soup that Laila and Nadia's mom makes. It's pretty simple and requires very few ingredients. Laila always jokes that she learned to cook because her mom wasn't much of a cook herself (which her mom protests). but this soup is always a hit and reminds us of home.
Serves 6
2 cups red lentil
Half an onion
2 tbs tomato paste
1/2 tbs cumin powder
Half a lemon
Olive oil
Wash and drain the lentils. Add to a pot and cover with 5 inches of water. Add half an onion, the tomato paste, and the cumin. Bring to a boil then turn the heat down and cook for 40 minutes.
Take half the soup and blend in a blender or using a stick blender. This is to make it more creamy, but I like not blending all of it so there is still some texture. If it's too thick, add a little water. Combine the blended and non-blended soup. Serve with olive oil, a little lemon, and a personalized Gohar World napkin.
